veggies and more veggies

I am sick of eggs. How else do you eat vegetables with your breakfast unless they're with eggs?

I'm going to come clean and tell you that there was one morning when I didn't have vegetables for breakfast. I just couldn't handle another morning of eggs. This morning I had celery with a little bit of peanut butter. Not quite breakfast food but still veggies. Almost done with two weeks of eating veggies at every meal.

Oh, and the majority of my snacking has been on veggies as well.

My initial commitment was to do this for two weeks. Kevin asks how long I will continue. I think I might keep doing it for awhile, except I might not keep to it at breakfast. Like I said, I am tired of eggs.

This has been a good reminder for me to think about what I'm putting into my mouth and trying to make wise choices. I tried to make vegetables the main portion of my lunch and dinner as well. Lunch was super easy, and dinner wasn't too bad either. So I think I will keep trying to keep vegetables more a major staple of a meal rather than a side we all just eat because we know we have to because we're supposed to and they're good for us. Seth discovered that he loves spinach through this, so that's good.

But I do look forward to a bowl of cereal with cold milk or a nice slice of peanut butter toast very soon!

i have a good recipe for veggie muffins....maybe an alternative to eggs? Eden likes them :)
