the week is flying by

First official ELI class tonight. I had some returning students and some new ones. One of the new ones is a mom from my second grade class last year! That was fun. We just reviewed what we covered last year, and that was good. They are definitely participating more than they did last year. Perhaps they feel more comfortable or confident. Not sure but I really enjoyed it. Class goes so much better when they're willing to try and participate! It was a great night!

I've been volunteering in the school library on Thursdays, so long as Seth still gets in his naps. I don't know if I'm more of a help or hindrance since I have to bring him, which then means my attention is divided and we end up distracting students. But I am liking that as well, and the new librarian this year seems to think that I am helping.

Oh, and it was a tomato bisque I made last night. So yummy. Here's the recipe:

Ingredients:
4 large onions
10 cloves of garlic
1 cup butter
7 cups (or more) diced tomatoes
3 liters tomato juice
6 bay leaves
2 tsp. each of basil, dill, thyme, parsley, and baking soda
16 oz. cream cheese
1 liter light cream

1. Saute onions and garlic in the butter.
2. Add the diced tomatoes and tomato juice. Simmer for 15 minutes.
3. Add the bay leaves and the basil, dill, thyme, parsley, and baking soda. Add cream cheese and light cream. Simmer for 15 minutes.

*This makes a double recipe and freezes well. (I can only make half this because I don't have a big enough pot!)

Mom wants to know if it tasted like tomato soup, because she doesn't like tomato soup.

I dislike tomato soup very much myself, and I love this. So if that says anything...no, it doesn't take like tomato soup.
